Job Description

The Chef de Cuisine - Indian Kitchen will hold a pivotal leadership role within the hotel's culinary department. The core focus will be on the complete management and operation of the Indian kitchen, ensuring the highest standards of quality, consistency, and authenticity. The successful candidate will be responsible for leading and training a team of cooks, overseeing all aspects of the specialized kitchen's daily operations.

Key Responsibilities:

  • Operational Leadership: Full oversight of the daily operations of the Indian kitchen, including preparation, cooking, plating, and presentation.
  • Creative Menu Development: Designing and developing innovative and authentic menus that reflect the diversity and richness of Indian cuisine, while considering quality standards and food cost.
  • Quality Control: Ensuring all dishes meet the highest standards of hygiene, food safety (HACCP), taste, and visual presentation every single time.
  • Team Management: Leading, guiding, training, and motivating a team of cooks and commis to foster a collaborative and professional work environment.
  • Cost Management: Assisting in monitoring food and beverage costs, controlling waste, and managing inventory and procurement within set budgets.
  • Guest Satisfaction: Interacting with guests when necessary to ensure an exceptional dining experience that meets the expectations of the luxury Hyatt brand.

Requirements and Qualifications

Hyatt is seeking a candidate with deep expertise and a genuine passion for Indian cuisine, coupled with a proven ability to perform in a fast-paced, multicultural hotel environment.

Essential Qualifications:

  • Minimum 5 to 7 years of culinary experience, with a strong focus on authentic Indian cuisine from various regions (North, South, Mughlai, etc.).
  • Previous experience in a similar leadership role (Chef de Cuisine, Executive Chef, or Sous Chef) within a 5-star hotel or high-end restaurant.
  • Comprehensive knowledge of food safety and hygiene procedures (HACCP) and local standards.
  • Excellent leadership and management skills with the ability to train and develop teams.
  • Creativity and innovation in dish and menu development.
  • Strong communication and interpersonal skills in English (Arabic is a significant advantage).
  • Ability to work under pressure and manage time effectively in a fast-paced environment.
  • Flexibility to work during peak hours, holidays, and weekends.
