Job Description

A Chef de Partie holds a pivotal role in the hotel kitchen, responsible for managing a specific section (the "partie") of the food production line. Your key responsibilities during this short-term contract will include:

  • Directly supervising the preparation and presentation of all dishes from your assigned section (e.g., appetizers, main courses, pastry, butchery, etc.) according to Marriott's high standards and specified recipes.
  • Ensuring consistent quality of taste, presentation, and temperature for every dish that leaves your station.
  • Assisting in the development of seasonal or special event menus as required by the hotel's needs during the contract period.
  • Supervising Commis Chefs and kitchen staff within your section, training them on required procedures and standards.
  • Maintaining the highest standards of hygiene and food safety (HACCP) in your work area at all times.
  • Managing inventory for your section, ensuring efficient use of food supplies and cost control.
  • Working collaboratively with the Head Chef and the entire kitchen brigade to ensure smooth and efficient kitchen operations, especially during peak periods and events.

This role requires high flexibility and the ability to adapt to a fast-paced environment, designed for individuals who can deliver exceptional performance during a focused timeframe.

Requirements and Qualifications

To qualify for this opportunity, you should meet the following criteria:

  • Proven practical experience of at least 2-3 years in a similar position (Chef de Partie or Station Chef) within a hotel kitchen or high-end restaurant.
  • In-depth understanding of various cooking techniques and international culinary standards.
  • Strong knowledge of occupational health, safety, and food hygiene standards.
  • Ability to work under pressure and manage time effectively in a busy kitchen environment.
  • Strong team spirit and effective communication skills with colleagues and management.
  • Flexibility to work during high-volume periods, including weekends and holidays.
  • A genuine passion for cooking and creativity in food presentation.
  • Proficiency in English for communication in an international workplace. Knowledge of Arabic is an added advantage.
