We are looking for a creative and ambitious Sous Chef Sushi to work within one of our luxury hotel properties. In this role, you will play a key part in managing and operating the sushi section, delivering exceptional Japanese dining experiences to our guests.
Job Description and Key Responsibilities
The Sous Chef Sushi will oversee the daily operations of the sushi section under the guidance of the Executive Chef or Asian Kitchen Chef. Key responsibilities will include:
- Operational Supervision: Assist in managing and directing the team of sushi chefs during service periods to ensure high efficiency and quality.
- Quality Assurance: Uphold the highest standards of quality and hygiene (HACCP) in the preparation of all sushi, sashimi, and other Japanese dishes.
- Creativity and Execution: Contribute to the development of seasonal menus and special promotions, maintaining a balance of authenticity and innovation.
- Inventory Management: Assist in monitoring stock levels, ordering fresh supplies (especially fish and seafood), and ensuring proper storage to minimize waste.
- Training and Development: Train and mentor junior team members on proper sushi preparation techniques and safety standards.
- Guest Satisfaction: Ensure every dish is prepared with high technical precision and presented attractively, responding to guest feedback professionally.
Essential Qualifications and Requirements
To qualify for this opportunity at ENNISMORE, you should meet the following criteria:
- Proven Experience: A minimum of 3 to 5 years of proven experience in sushi preparation within luxury restaurants or hotels. Previous experience in a Sous Chef or Chef de Partie role for a sushi section is a significant advantage.
- Technical Knowledge: Deep mastery of traditional and modern sushi techniques, with comprehensive knowledge of fish and seafood varieties and quality grades.
- Leadership Skills: Ability to lead a small team in a fast-paced environment, with effective communication and delegation skills.
- Standards Compliance: Strong understanding of food safety, hygiene protocols (HACCP), and sanitary practices.
- Flexibility: Ability to work various shifts, including weekends and holidays, and maintain composure under pressure.
- Language: Good communication skills in English. Knowledge of Arabic is a beneficial addition.
