- Dough Preparation: Preparing porotta dough from scratch using the correct ingredients (such as flour, water, oil/ghee, and salt), mixing and kneading it to achieve the perfect consistency and required elasticity.
- Shaping and Grilling Porotta: Dividing the dough into equal-sized balls, stretching each ball into a very thin circle using the distinctive stretching technique, then folding and coiling it in the traditional manner before grilling it on a hot griddle (tawa) until cooked and acquiring the characteristic golden, spotted color.
- Quality Control: Ensuring every piece of porotta is produced with the same high quality, in terms of doneness, the flaky exterior and soft interior texture, and appropriate size.
- Productivity and Organization: Working quickly and efficiently to meet kitchen orders during peak hours, while maintaining workstation cleanliness and adhering to food safety and health procedures with the highest hygiene standards.
- Inventory Management: Assisting in monitoring stock levels of essential ingredients used in making porotta (like flour and oil) and informing the supervisor when replenishment is needed.
Required Qualifications and Skills
To be eligible for this position, you must meet the following criteria:
- Practical Experience: Proven previous experience of at least 1-2 years in making porotta in a restaurant, hotel, or similar food establishment. Preference will be given to those with experience in Indian, Sri Lankan, Bangladeshi, or South Asian kitchens in general.
- Technical Skills: Complete mastery of traditional porotta-making techniques, from kneading to grilling. Ability to work quickly under pressure while maintaining quality.
- Knowledge: A basic understanding of food safety and health (e.g., HACCP) is an added advantage.
- Physical Fitness: Ability to stand for long periods and work in a hot kitchen environment.
- Personal Skills: Team spirit, reliability, and commitment to work schedules.
- Legal Status: Applicants must hold a valid residence permit in the State of Kuwait and be able to transfer sponsorship if necessary. Preference for candidates currently located inside Kuwait.
