Job Description & Key Responsibilities
The Chef de Partie (Gard Manger) will be stationed in a vital section of the kitchen responsible for all cold food preparation and visual food presentation. The successful candidate will be part of a dynamic culinary team committed to the highest standards of quality, hygiene, and innovation.
Key responsibilities will include, but are not limited to:
- Overseeing the operations of the Gard Manger (cold kitchen) section during the shift.
- Preparing and producing a wide variety of high-quality, consistent cold dishes, including:
- Cold appetizers and hors d'oeuvres.
- Various types of salads and their dressings.
- Cold meat platters and charcuterie.
- Cheese boards and arrangements.
- Cold sauces and dips (e.g., mayonnaise, vinaigrettes, aspic).
- Food garnishes utilizing expert knife skills and artistic presentation.
- Ensuring all products in the cold section are handled and stored according to strict food safety protocols (such as HACCP).
- Assisting in menu planning and contributing creative ideas for new dishes that cater to diverse guest tastes.
- Maintaining exceptional levels of cleanliness in the work area, in compliance with both global Hilton standards and local health regulations.
- Supervising and training Commis Chefs within the section, sharing knowledge and expertise.
- Managing inventory within the section and ordering supplies in coordination with the Sous Chef or Head Chef.
- Contributing to a positive and collaborative working environment within the kitchen brigade.
Required Qualifications & Skills
To qualify for this opportunity at Hilton, you should meet the following criteria:
- Proven Experience: Minimum of 2-3 years of demonstrated experience in a similar role (Chef de Partie or Senior Cook) within a Gard Manger or cold kitchen section, preferably in a 5-star hotel or high-end restaurant.
- Technical Knowledge: In-depth understanding of cold food preparation techniques, advanced knife skills, and food presentation.
- Safety Standards: Full commitment to hygiene and food safety standards.
- Personal Skills:
