Job Description and Key Responsibilities
The Chef de Partie holds a pivotal role in managing a specific section of the hotel kitchen. The successful candidate will be directly responsible for overseeing the cooking operations at their designated station, working under the guidance of a Chef de Cuisine or the Executive Chef. Key responsibilities include:
- Kitchen Section Supervision: Managing and organizing a specific workstation (such as appetizers, meat, pastry, or sauces) within the main hotel kitchen or one of its restaurants.
- Quality and Consistency Assurance: Preparing and presenting all dishes according to the high-quality recipe standards set by the Pullman brand, maintaining consistency in taste and presentation.
- Adherence to Safety and Hygiene Standards: Strict compliance with food safety protocols (HACCP), health and hygiene standards, and standard kitchen operating procedures.
- Inventory and Stock Management: Assisting in monitoring section inventory levels, ensuring efficient use of food ingredients, and minimizing waste.
- Guidance and Supervision: Supervising Commis Chefs and junior cooks within the section, providing necessary guidance and training to ensure team efficiency.
- Teamwork: Collaborating effectively with all kitchen sections and service departments (restaurant, room service) to ensure smooth workflow and meet guest expectations.
- Contribution to Development: Contributing ideas to the development of seasonal menus or special dish promotions under the direction of the Executive Chef.
Required Qualifications and Skills
To be a successful candidate for this position, you should meet the following criteria:
- Practical Experience: Proven experience of at least 2 to 3 years in a similar Chef de Partie role within an upscale hotel or fine-dining restaurant kitchen.
- Technical Knowledge: In-depth understanding of basic and advanced cooking techniques, broad knowledge of international cuisine preparation, particularly suitable for a global hotel environment.
- Leadership Skills: Ability to manage and direct a small team during a shift while maintaining morale and discipline.
- Ability to Work Under Pressure: Flexibility and capability to work effectively and swiftly in a fast-paced, high-pressure kitchen environment, especially during peak periods.
- Quality Standards: A keen eye for detail and an unwavering commitment to absolute quality and hygiene standards.
- Interpersonal Skills: Good communication skills, a positive attitude, and the ability to work as part of a cohesive team.
- Educational Qualification: A diploma or certification in Culinary Arts or a related field from a recognized institution is a strong advantage.
- Language: Proficiency in English for communication in an international work setting. Knowledge of Arabic is an additional advantage.
