Job Description and Responsibilities

The Executive Sous Chef will play a pivotal role in the management and operation of the hotel's kitchen. They will be directly responsible for supporting the Executive Chef in all operational and administrative aspects, ensuring the kitchen adheres to the highest standards of quality, safety, and hygiene. Key responsibilities include:

  • Operational Oversight: Assist in managing all aspects of daily kitchen operations, including main kitchens and specialty restaurant kitchens within the hotel, ensuring smooth and efficient service during all shifts.
  • Quality Assurance: Directly supervise the preparation and presentation of all dishes according to precise global Hilton standards, maintaining consistency in taste and presentation for every guest meal.
  • Team Management: Assist in leading and guiding the culinary team, including training and development, fostering a positive and cooperative work environment focused on teamwork and excellence.
  • Cost Control: Assist in monitoring inventory and purchasing, controlling food costs, and minimizing waste to ensure the kitchen meets its financial targets.
  • Development & Creativity: Contribute to the development of seasonal menus and special promotional offerings, bringing creative ideas to keep culinary offerings fresh and appealing.
  • Compliance & Standards: Ensure full compliance with all local and international health and safety regulations, conducting regular checks to maintain a safe working environment.

Requirements and Qualifications

To be a successful candidate for this important role at Hilton Qatar, you should meet the following criteria:

  • Education & Experience: A degree or certification in Culinary Arts or a related field. A minimum of 5 to 7 years of practical experience in hotel cuisine, with proven experience of at least 2-3 years in a similar leadership role (Chef de Cuisine or Sous Chef) within a luxury hotel or high-end restaurant.
  • Leadership Skills: Strong ability to lead and motivate a diverse team of chefs and kitchen staff, with excellent communication and interpersonal skills.
  • Technical Knowledge: Deep knowledge of various international cuisines, cooking techniques, and food safety standards (HACCP).
  • Administrative Skills: Good understanding of food & beverage cost control principles, budget management, and inventory management.
  • Resilience & Pressure: Ability to work effectively under pressure in a fast-paced environment, with flexibility in working hours including holidays and weekends.
  • Language: Proficiency in spoken and written English. Knowledge of Arabic is a strong additional advantage.
