Job Description & Key Responsibilities

The successful trainer will occupy a crucial role in ensuring the quality and consistency of pastry and gelato products served across the cafe's outlets. The core focus will be on the training and operational aspects to maintain continuous excellence.

Key responsibilities include:

  • Training and qualifying new and existing kitchen staff (chefs and assistants) on the specific standards, recipes, and procedures for pastry, dessert, and gelato preparation as set by management.
  • Developing and implementing hands-on training programs covering all aspects of operations, from basic preparation to advanced recipes and presentation techniques.
  • Ensuring strict adherence to the highest standards of hygiene and food safety (HACCP) throughout all stages of the production process.
  • Supervising the quality of ingredients used and the final product, conducting regular quality control checks.
  • Assisting in the development of seasonal or special dessert and gelato menus, in collaboration with the management team.
  • Maintaining a high level of operational efficiency and productivity in the pastry section, managing inventory of related ingredients.
  • Providing regular reports to the Head Chef or Operations Manager on team progress, challenges, and needs.

Required Qualifications & Skills

Essential Requirements:

  • A minimum of 3 to 5 years of hands-on experience in pastry, dessert, and gelato production, with some of that experience in a training or supervisory capacity.
  • Deep knowledge and high technical skills in all aspects of pastry (viennoiserie, cakes, baked goods) and traditional Italian gelato making.
  • Strong understanding of food safety principles and personal/professional hygiene.
  • Excellent communication, teaching, and teamwork abilities within a multicultural team.
  • Flexibility in work assignments and hours, including readiness to work on weekends and holidays as per business requirements.
  • Proficiency in English for communication is essential. Knowledge of Arabic is a distinct advantage.
